Champagne vs. Sparkling and How to Open the Bottle

Did You Know?

"Champagne" can only be called Champagne if it’s produced in the Champagne region of France?

Ever wonder what Prosecco, Asti Spumante, Cava and Sparkling meant?

Well, they are the same thing but just can’t call it Champagne – which is why you’ll see on the bottle that they were made using the Champagne method.

The United States was in prohibition when other wine regions were signing this “contract”. Therefore, we did not sign it. That is why you can find “Champagne” from the U.S.

Check out these great step-by-step directions on the proper way to open a bottle of bubbly. Remember...the key is to twist the bottle, NOT the cork!

Mulled Wine Recipe

Here is a delicious recipe for a cold evening this holiday season! Enjoy.

For this mulled wine, select a Cabernet Sauvignon with hints of black cherry flavor. Labels typically describe a wine's characteristics.

2 quarts black cherry juice
3 (3") sticks of cinnamon
6 whole cloves
2 (6-ounce) cans pineapple juice
1 (6") piece of ginger, peeled and sliced
2/3 cup sugar
1 (750ml) bottle Cabernet Sauvignon
1/3 cup lime juice

Combine first 6 ingredients in pan. Bring to a boil; cover, reduce heat, and simmer for 30 minutes. Stir in wine and lime juice; heat thoroughly but do not boil. Transfer mixture to a heatproof punch bowl or coffee pot if desired. Discard whole spices. Serve warm!
Yields 13 cups.

Going out of Business Sale


Due to a bill that Governor Jim Doyle passed in 2008, we are no longer able to operate as both a winery and a wholesaler. Our business started many years ago as a wine importer and wholesaler and we have several retail/restaurant customers in WI and MN who would be disappointed if we were unable to supply wine to them anymore. Therefore, after much debate we have chosen to continue our importing and wholesale business, the Wandering Epicurean, and close Trade River Winery. We are very saddened by this and thank each of you for your business and support over the last four years. We encourage you to talk to your local retailer and ask them to carry your favorite wines in their store so that you can continue to enjoy the small production wines we bring you from around the world.

As of November 1, 2009 we are not able to sell anything out of our gift shop in Grantsburg, or online. Therefore, we’re having a HUGE SALE and everything must go! All of our gifts, apparel and food items are on sale as well as many of our wines. Get them while you can!! We’re extending our hours this weekend (Thurs & Fri 3-8pm and Sat. Noon-5pm). Come early or miss out! Thanks again, we will miss you all.

Oktoberfest - September 26

Our annual Oktoberfest is coming soon! Here are the details:

Saturday, September 26
We're open from Noon - 8pm

Live Music from 1-4pm by the Elk River German Band
Cover charge is $10 per person includes a hot plate of German food prepared by Nancy's Country Kitchen from Grantsburg, WI. Food will be served all day, starting at noon.

The menu consists of pork tenderloin, sauerkraut with carraway and apple, hot German potato salad and dark Russian rye bread (made by Smoland Prairie, Grantsburg).

Nancy will also have delicious desserts available for an additional charge. We ordered lots of food this year, so you can even purchase seconds!

Wear your lederhosen and dirndl because we'll be having a costume contest!

There is plenty of free parking. We will be serving wines from Austria, Germany and a new wine from Idaho! Not a wine drinker? That's ok too as we'll have a beer tent with a couple beers on tap.

Come early for a seat or bring a lawn chair or blanket! Hope to see you here on the 26th!

LEARN ABOUT WINE!

September 15: The Process of Making Wine
Attendees will sip on some wine while they learn
about the growing of grapes, what "late harvest"
means, the characteristics of oak vs. stainless steel
fermented wines, how "pink" wines are made,
different wine regions and their regulations,
and what gives them those headaches they
might receive after drinking wine.

September 29: Wine Tasting Basics
Attendees will enjoy a lovely evening where
we will sample wines and discuss the
characteristics of different grape varietals, the
proper way to see, smell and taste wine,
glassware styles, and serving and storing
temperatures - we'll take the mystery out of wine
as we discuss the basics of food and wine pairing.

October 13: Throwing a Wine Tasting Party
Attendees will have fun while they try new wines
and learn the basics of reading a wine label
(what is “Reserve”, and does it mean it's better?),
getting the right supplies for the party, and picking
out the best cheeses and foods for a variety of
wines. We'll even spice it up a little bit and show
you how to throw a "blind tasting" party where
you and your friends are guaranteed to have a
night filled with laughter!

November 10 - Holiday Entertaining
Attendees will learn some tricks of the trade
when pairing wine with holiday meals.
Trade River Winery will provide some delicious
treats (and send you home with the recipes)
which are perfect for serving to a crowd.
Attendees will also receive a special discount on
wine and wine accessories which make the
perfect hostess or holiday gift. Gather your

Wednesdays at Trade River Winery we're open from 2-6 p.m.


Thursdays at Trade River Winery is Ladies Day! We're open from 2-6 p.m. This includes:
*1/2 price tastings on wine for the ladies ($2.50 for 5 samples)
*$1 per minute chair massages
*Each week we feature something new for ladies. So far this year we've had Bellinis, cheese and crackers, jewelry displays, health drink samples, candles, etc. Coming up on August 13 at 2:30 and 5:00, Nicki Peterson, certified wine professional, will give a short presentation on "How to Throw a Wine Tasting Party". Notice - two different times so you'll be sure to make it to one of them!
*Featured "Wine of the Day" - a great wine with a reduced price of only $10 - changes weekly!

Tonight's Tapas Menu

Tonight from 5-7pm we will feature Portugese food and wine pairings. The menu sounds delicious! Here it is:

*Baguette with olive tapenade
*Imported cheese with figs
*Portugese bean salad

Paired with:

*Costa do Pombal - a blend of white grapes, this wine is from Pinhao, Portugal. It is dry, round, smooth and well balanced. Pairs well with salads, fish, pasta and risotto.
*Damasceno Rose is a blend of 55% Syrah and 45% Aragones grapes. On the palate it is young, fresh and very fruity. This wine hails from Poceirao, Portugal.
*Pontval Trincadeira/Touriga Nacional is from Alentejo, Portugal and is a blend of the unique portugese grapes Trincadeira and Touriga Nacional. It has a deep ruby color with flavors of mature fruits. Very smooth and easy to drink.

$10 per person.

July 27-August 2 at Trade River Winery

Grecco's in St. Croix Falls, WI will soon be launching Chef in a Box, so when you can't get to Grecco's you can have it delivered at home! We have been selected to be the wine purveyor for his program. Chris will be at Greccos' this afternoon for the filming of the how-to videos which will be included in the Chef in a Box. Stay tuned for more details!

Wednesday we're open from 2-6. Come join us for some wine and relax on our elegant patios!

Thursday is ladies day. Sheila Waldoch will display her sterling silver jewelry and Sue Schneider will be here with her healthy juice drinks, Mona Vie. Of course, we will have half price tastings for the ladies and $1/minute massages as usual! We're open from 2-6 pm on Thursday.

Friday's tapas menu has a Portugese theme. Check back for the menu.

Saturday, we're open at the winery from noon-8pm. New Roots Duo will be playing their music from 4-7pm. Nicki will be sampling Trade River Winery wine at the Lakeview Center in Siren, WI for their art show from 1-3pm. You may purchase wine throughout the day as well.

Headliner quartet for 2009 is named Storm Front

It has been quite a journey for the 2010 International Quartet Finalists. The 2002 Rocky Mountain District champs have made seven trips to the International contest stage, including Top 10 placement each of the past six years.

For these four guys, the love of barbershop and great entertainment has blended to create show-stopping performances. They have been blessed to see so much success in such a short time. They are thankful to all the chapters and individuals who have supported them and are most especially thankful to their families and friends for the love and encouragement they provide.

Another fun week here at Trade River Winery! Here's a glimpse at what's going on:

Wednesday we're open from 2-6pm.

Thursday is Ladies' Day! 1/2 price tastings for the ladies, $1/minute chair massages, $10 featured bottle of wine. Also, Lois Thompson Baldwin with Scentsy Candles will be here from 2-6pm.

Friday is Tapas night - this week's menu includes:
*Pecorino cheese from Italy paired with San Pietro Chianti Reserva
*Brie from France paired with Juan de Arges sparkling wine
*Manchego cheese from Spain served with Luis Gurpegui Berceo
All served with champagne grapes and crackers for only $10. Food is served from 5-7pm but we're open from 2-8pm for wine tastings.

Also on Friday, Lisa will be at Dresser Food & Liquor from 3-6pm offering wine samples.

Saturday we're open from noon - 8pm with live music by Bo Billy from 4-7pm. The Grantsburg volleyball team will be here from 4-7 as well serving food as a fundraiser - come hungry and support the girls!

Sunday we're open from 1-5 pm. Lisa will also be back at Dresser Food & Liquor from 1-4 with more wine samples!

Tasting Events, Appetizers, Meet the Winemaker Fernando

It's going to be a great couple weeks here at Trade River Winery!

Tuesday at Mona Lisa's in Eau Claire from 6-8pm Nicki will be serving up samples of premium wines. Stop in and try them out!

Wednesday the winery is open from 2-6pm.

Thursday is Ladies' Day at the winery. 1/2 price tastings for ladies, $1/minute massages, cheese and crackers....more details to come. We're open from 2-6pm.

Friday at the winery, we are open from 2-8pm. From 5-7 pm we will serve Greek Meze paired with premium greek wines. The menu includes Domades (stuffed grape leaves); Mediterranean Olives; Fresh Tomato with Feta Cheese and Pita. Wine pairings include Lafkiotis Moscofilero (white), Lafkiotis Kleoni (rose), Lafkiotis Agiorgitiko (red). Only $8!

Friday in Rice Lake, WI Nicki will be at Burnell's Decor sampling out wines during their "Afternoon with the Arts" event. 2-4 pm.

Some easy steps to food and wine pairing…

When the food is…

TART:
*Serve a wine that is equally sharp or even more so, or the wine will taste off and shattered.
*Avoid red wines, except those of a sharper nature (Sangiovese, Pinot Noir, Gamay)
*Don’t overlook dry roses and sparkling wines as options.

SLIGHTLY SWEET:
*Make certain that the wine accompanying the food shares its personality traits: choose a wine that is slightly sweet, such as Chenin Blanc, Riesling, or even Sake.
*If you really want a dry wine, serve one that’s young and very, very ripe.
*Remember that sometimes a wine with oak can work if the wood’s sweetness mirrors that of the dish; however success is not guaranteed.

SALTY:
*Pick wines with low to moderate alcohol content, as the salt will exaggerate the wine’s heat.
*Play with wines that have some sweetness; salt and sweet can enjoy each other’s company!
*Avoid wines with high levels of oak or tannin.

SPICY OR HOT:

*The spicier the dish, the more difficult it is to pair with wine. Select young wines with low to moderate alcohol content, minimal (or no) oak, and if possible, some residual sugar (for whites or roses).
*Among still wines, stick to off-dry whites and roses; sparkling wines can also be nice foils for heat.
*You may have to forgo wine with Texas five-alarm chili or those Thai, Indian, and Korean dishes that make your hair stand on end. Opt instead for beer and yogurt-based drinks, along with large, large bowls of rice!

BITTER:
*Select wines with bitter components (oak aging, tannins) to complement the personality of the recipe.
*Try wines with high acidity. This doesn’t always work, but it’s better than the opposite extreme. After all, tannin is an acid.

DOMINATED BY A STRONG SAUCE OR CONDIMENT:
*Forget the main dish and match the wine to the sauce or condiments and side dishes.

SERVED VERY HOT!
* Allow the dish to cool off, or it will ruin your enjoyment of the wine and make the alcohol (by heating it) seem overwhelming.
*Serve chilled wines if it’s essential that the dish be served very hot.

Fortified Wine

What is fortified wine and how is it made? Some wines are classified as fortified because their alcohol has been strengthened, or fortified, by adding a high-alcohol spirit (brandy) to the wine. The most famous are Port, Sherry, Marsala and Madeira.

Why did people start fortifying their wine? To stabilize them and preserve them for shipping/travel (started by British merchants who shipped the wine long distances as they built the British wine trade).

If a spirit is added during fermentation, as in Port, the spirit will raise the alcohol content to a level at which fermentation will stop (around 15%) which means that not all sugars will have turned into alcohol leaving the port sweet. If the spirit is added after fermentation, as in Sherry, the sugars in the grape juice are all converted to alcohol, producing a dry wine. It can be sweetened later in the process if necessary.

Fortified wines are often used as an aperitif with nuts, olives and cheese or as an after dinner drink. If the fortified wine is sweet it is often a wonderful match to a variety of desserts. If you are serving a dessert and want the perfect wine match, just ask and we'll help you pick it out.

Wine Pairing Lunch

This post is a little past due, but I wanted to share a wonderful 5 course wine and food pairing lunch I hosted for my mother-in-law on Mother's Day. It turned out to be a wonderful lunch with excellent pairings.

1. Stilton Cheese with Vista Allegre Tawny Port

2. Salad greens with basil pesto, sun-dried tomatoes, pine nuts and fresh mozzarella with Salvano Gavi Cortese

3. Butternut Squash Risotto paired with Cavas de Chacras Viognier

4. Lamb chops, sweet potato puree, summer ratatouille paired with Pontval Syrah

5. Affogatto (chocolate gelato with espresso) paired with Tezza Recioto. This is the only pairing I would have changed. The Recioto's raisin flavors didn't match very well with the milk chocolate in the gelato. I might have tried the Cantine Mothia sweet Marsala from Sicily as that might have been good with the coffee flavors.

10 Things You Should Know About Sulfites in Wine

One of the wineries we visited with in Idaho last summer was Indian Creek Winery. They just posted this to their blog at indiancreekwinery.blogspot.com and we wanted to share it with you!

1. Sulfites are naturally occurring in all wines, this is because they are a natural by-product of fermentation. Very rarely, if ever, is a wine made that is truly sulfite free.

2. By adding sulfites, the natural flavors of the wine are allowed to shine through. This is because sulfites are primarily used for their anti-oxidant and anti-microbial properties.

3. Sulfites are not related to the headaches some people get from red wine. Many scientists believe that it is actually the natural histamines that are found in red wines.

4. Many dried fruits contain a lot more sulfites than wine. For instance, a 2 oz. serving of dried apricots contains more than ten times the amount of sulfites than is in normal glass of wine.

5. In the USA, all wines that have more than 10ppm (parts per million) must show "CONTAINS SULFITES" on the label, whether the sulfites are natural or added.

6. Sulfites are not bad for you. In fact, the human body produces about one gram of sulfites everyday. This is nearly 100 times the amount in one glass of wine.

7. Wines without added sulfites spoil very quickly. This is due to the lack of oxidant and microbial control that the sulfites provide.

8. Sulfites were first used in winemaking by the ancient Greeks, Romans, and Egyptians to sterilize their wine vessels and have been added directly to the wine since the 17th century.

9. Despite popular belief, sulfites are not just used by American wineries. In fact, most wineries around the globe use sulfites...yes even the French.

10. Less than 0.25% of the population is allergic to sulfites and many scientists believe that it is somewhat correlated with those who suffer from asthma.

Gearing up for summer!

March is around the corner and marks a very exciting month in the wine business. Marge is scheduling musicians for Music on the Patio which will be every Saturday from 4-7pm. We've all been busy brainstorming ideas for Ladies Day which will be Thursdays, and finding recipes/caterers for Tapas night on Fridays. We also changed up the gift shop a little bit by building a new checkout counter and tasting bar. We will be adding some chalkboards to advertise events and are updating our wine club information (one set price). It's a pretty exciting time at the winery as we look forward to our fourth summer open!

On the wholesale side, we are gearing up for tastings! Restaurants typically search for wines for their spring/summer wine lists in March. So letters are being sent out to prospects, meetings set up with current and potential customers, and the 2009 wine portfolio was just printed! It's an exciting time, but a stressful time. If we sit back and watch the month pass by we could potentially be out of the game until August.

Lisa and I attended the UP Show (Upper Midwest Foodservice and Lodging Show) on Monday. We made some good connections, so hopefully we get some business! It's always good to just get our name out there. The event was held in Minneapolis and 3 other distributors and 3 wineries were sampling their juice as well. There are about 50 wine distributors in the Metro area, so there's a lot of competition. What sets us apart? We are a family business; we are the importer and distributor (cut out the middleman); we personally visit the vineyards and hand select the wines we want to import; many of the wines are small production and hand harvested making for high quality; and we treat our customers like family.

How to Throw a Wine Tasting Party

Determine your guest list and send invites at least two weeks before your tasting.

What you'll need: corkscrew, water, non-transparent cup (for spitting), at least one wine glass per person, tasting cards, pen/pencil; bread or flavorless crackers for palate cleansing; appetizers, cheese or other niblets; and of course, wine!

Consider an overall theme for the tasting. Maybe several different wines all from Napa, for instance. Or one each of the same varietal (grape) from Napa, Sonoma, Mendocino, etc. Or try several different varietals -- Cabernet, Pinot Noir, Zinfandel for reds, or Chardonnay, Sauvignon Blanc and Viognier for whites. Or set up a "Italy vs California shootout." The possibilities are endless, but in each case, the idea is to learn something by comparing similar-only-different wines to see if you can pick up consistent differences among them.

Design a tasting card that specifies the type of wine, the producing vineyard, the year and a brief description of the wine (usually found on the wine’s label). Make sure that each guest has their own tasting card to record the wine’s distinct appearance, aroma and flavor.

Traditionally, white wine is served in glasses that are a little smaller than those for red. Smaller glasses keep white wines chilled, while the larger bowls of red-wine glasses give fuller-bodied reds more room to breathe.

Before serving, chill the white wines for 30 minutes to an hour, to a temperature of 45 degrees to 50 degrees; if they're too cold, the taste of the wine will be dulled. Red wine is served at room temperature, but if a house is particularly warm, the wine may need to be chilled slightly. Red wine should be served at a temperature of 50 degrees to 65 degrees (serve lighter wines at the lower end of that range, full-bodied wines at the higher end).

Typically, when tasting wines, you will want to work from dry wines to sweet wines; light to full-bodied; young to aged; and white to red. Have your guests sample each wine by itself, assessing the wine’s unique color, smells and flavors. If pairing with food, note if the pairing worked well. If there are multiple components to the dish, try the wine with each separate component and then all together.

To make your event a bit more challenging, offer a “blind tasting” experience. In this case, you still provide your guests with their individual tasting cards; however, you pour each wine without identifying the label, allowing them to incorporate all of their senses to identify the respective wines based on the labels’ descriptions. The guest that is able to identify the most wines correctly wins a prized bottle of wine or perhaps a book on the art of wine tasting.

New Hours and Ideas for Summer 2009!

We've been throwing around ideas for extended hours at the winery this summer. In the past we've been open Friday - Sunday. This is what we came up with:

Wed 2-6pm
Thurs 2-6pm
Friday 2-8pm
Saturday 12-8pm
Sunday 1-5pm

Opening weekend for the extended hours will be Memorial Day instead of Mother's Day.

Thoughts? Suggestions? Send your comments!

Also, some new ideas to bring people out to visit us:
Ladies night (possibly Wednesday's)
Tapas (aka small plates) night (Friday's)
Music on the Patio on Saturday's - timeframe change from 2-5 to 4-7.
As in the past we'll have Red, White and You (4th of July celebration)
Oktoberfest (last weekend in September)

Advertising

So, with money being tight in every pocketbook, we are looking for new ways to advertise. Yesterday Patty, Marge, Chris and I talked about social networking sites and blogs. So, here we are in the blogging world! I hope to maintain this as often as possible and let you know what's going on at the winery!
